Description:  The enzyme is found in many seeds. It also occurs in yeasts, molds and bacteria. It was first extracted from sweet almonds and was formerly known as Emulsin. The purified §-glucosidase also exhibits considerable D-galactosidase activity. It is a relatively stable enzyme retaining its catalytic activity over the pH range of 2.0-9.5. Purified §-glucosidase from sweet almonds has 2 active subunits with molecular weights of 117,000 and 66,500.
